This simple but heavenly cake is all tangled up in my memories of my grandmother (we called her Nanny), Irene Mulally. When I visited her comfortable rambling home on Sydney’s North Shore with my brother and sisters, there would be a slice of cinnamon-y Nanny cake waiting for us. Served warm or cold, this cake made everything feel better.
My sister, Kylie makes it now when we go to visit and our kids all love it too.
The other great thing about Nanny cake is that, even though you are using all fresh ingredients and making it from scratch, it is as easy as a packet mix cake. Actually, it’s easier because, chances are you already have the ingredients at home so it’ll save you a trip to the store!
Nanny Cake
Ingredients: 1 cup Bakers sugar, 1 1/2 cups Self Rising flour, 2 eggs, 1/2 cup milk, 113g melted butter, 1 tsp vanilla Topping: cinnamon, Bakers sugar
Pour melted butter over all cake ingredients in a bowl. Mix together well. Pour mixture into greased, floured cake tin. Cook in oven 340F/170C 30-40 mins. Cooked when skewer comes out clean. Allow to cool slightly, place on plate, rub top of warm cake evenly with butter, and sprinkle with cinnamon and Bakers sugar. Serve warm or cold.
