I’ve finally come to realize I’m never going to be able to give up sweets. I crave them most afternoons and every night. Instead, I thought I’d start looking for some healthier alternatives. This fudge recipe tastes pretty good straight out of the fridge. It’s not quite as good at room temperature.
The ingredients are surprisingly healthy: coconut butter made from shredded unsweetened coconut (avail. here), a very ripe banana, unsweetened cocoa powder, cinnamon, salt, pure vanilla extract. I tried making the coconut butter myself, which only involves placing the shredded coconut into a Vita-Mix for 3-5 mins, this would probably work, but I tried using a food processor and nearly blew it up. The results were ok, but I wouldn’t recommend it.
If you think this isn’t going to be sweet enough, you can add some pure maple syrup. I used sweetened coconut instead. Everyone I’ve offered it to gave this healthy chocolate-banana fudge their stamp of approval and were surprised at the lack of added sugar. I hope you like it!
