slow cooker chicken tacos

I love taco night, and now that I’ve discovered this slow cooker chicken taco recipe I really love it. I always thought preparing meals in a slow cooker needed to be heavy beef stew-type deals but this chicken dish is light yet satisfying and as easy on the cook as it is on everyone who gets to eat it.

You simply place chicken breasts or boneless thighs straight into the slow cooker, sprinkle them with various yummy spices, tip some store-bought salsa over the top and leave it for 4-8 hours (4 on high or 8 on low). Shred the chicken with two forks when it’s done and serve with fresh sides like shredded lettuce, more of the salsa, guacamole, and of course soft corn tacos and let everyone assemble their own creations. Slow cooker chicken tacos was a huge hit at my place last night!
