I love flatbread pizza and now that I’ve started making it myself using ready-made clay oven Lavash Bread, I’ve realized just how quick and easy it is!

Keeping a packet of this yeast-free flatbread (which originated in the Middle East) in my pantry, gives me the means to create super thin gourmet pizzas in a couple of minutes using whatever I can find in my fridge.

For this speedy lunchtime treat I pre-heated my oven to 450 degrees (F). I spread a very thin layer of tomato paste across the top of the bread. I already had some roasted Roma tomato halves in my refrigerator so I added those, a medley of Greek olives, I pan fried a handful of organic Crimini mushrooms, and sprinkled mozzarella cheese across the top.

It only needs to cook as long as it takes for the cheese to melt, the Lavash will become crisp in that time. Remove it from the oven, slice into quarters and enjoy!

Some other ideas for your flat bread pizzas are any roasted vegetable, cooked or cured meats, goats cheese, sun dried tomatoes, pine nuts, the list is endless.
