easy rack of lamb

If I need to cook a nice dinner quickly, I’ll often choose rack of lamb. I like lamb from Australia or New Zealand. Maybe it’s just a flavor I’m used to and it’s readily available at most supermarkets. While this is an expensive cut of meat, rack of lamb is a delicious, dinner party appropriate meal and it’s very easy to prepare.

Preheat your oven to 350 F degrees.

I usually allow 4 cutlets per person, which means 2 x racks to feed four people.

Place the racks in a baking tray and brush the outside with Dijon mustard.

Wash and chop red skinned potatoes into quarters. Quarter onions and place around lamb in the baking tray.

Drizzle lamb and vegetables lightly with olive oil and season with salt and pepper.

Cook in oven for 40 minutes.

Use this time to set the table and get yourself ready!

Remove lamb from the baking tray and cover with foil for 10 minutes. Turn potatoes and onions and return to oven. Turn heat up to 375 F degrees.

Steam broccolini for 10 minutes.

Slice each rack in half and serve with the vegetables on warm plates. A gorgeous meal, on the table in under an hour from start to finish.
